Healthy Crock Pot BBQ Pulled Pork (4/16/19)

Hi everyone! I have another recipe for you that I’m trying this week! This recipe comes from Skinny Southern Recipes.

After the French Dip I had last week, I was kind of wanting a pulled pork recipe. I stumbled upon this recipe, and (as always) I adapted it to my own.

I used pork instead of chicken. I also did not use onions in this recipe. Rather than the seasonings she recommends, I found a marinade at Walmart of Brown Sugar Bourbon flavor. I let that sit on the pork for about 20 minutes, and actually mixed it in with the sauce to give it a better flavor. I also added some cornstarch to thicken up the sauce a little because it was a little too runny for my taste.

I’ll admit I was a little hesitant with this recipe. Nothing in it is barbecue-based! At first, it was a little too tomato for what I was after. But I added some more balsamic vinegar, and it balanced it out. It’s not the best barbecue sauce, but it’s good. I like it, and will probably make it again!
