I’m working on eating healthier and living a better lifestyle. Last summer, when I interned at the Indiana State Museum, I did some meal prepping for my lunch. I’m working on doing that again, but for dinners. This way, I don’t have to think about what I’m going to fix for dinner. I just have it pre-made and all I have to do is assemble and heat!
So, on this first Weekly Roundup, I want to share with you the link to my favorite meal prep recipe that I discovered and have since fallen in love with! This is a recipe for Carnitas (pork) burrito bowls from Fit Foodie Finds! Check out the recipe here.
As most of you may know, rice is a pretty staple ingredient in burrito bowls. So Fit Foodie Finds has a copycat for Chipotle’s Cilantro Lime Brown Rice. I’m going to be honest here, I’m not a huge fan of rice, but this with the burrito bowls is fantastic! Find the recipe for the rice here.
*My one tip on the carnitas. I don’t sear the pork like is suggested. I just dump it in the Crock Pot or Slow Cooker for 6 hours with all the other ingredients in the initial cooking. This way, the pork can marinate in all the flavors. It turns out so good!
